Buffalo Chicken Filling

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1/2 cup buffalo sauce (store-bought or homemade)
  • 1/4 cup ranch dressing or blue cheese dressing (depending on preference)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded carrots (optional for crunch)

Assembly

  • 10-12 egg roll wrappers
  • Olive oil spray or cooking spray


Instructions

  1. Prepare the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, ranch or blue cheese dressing, and mozzarella cheese. Add the shredded carrots if using. Mix well until everything is evenly coated.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface with a corner facing you, forming a diamond shape.
  3. Add Filling: Place 2-3 tablespoons of the buffalo chicken filling in the center of the wrapper.
  4. Roll the Egg Rolls: Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top. Wet the top corner with a bit of water to seal it properly.
  5. Repeat: Continue assembling the remaining egg rolls with the remaining wrappers and filling.
  6. Preheat Air Fryer: Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  7. Prepare Basket: Lightly spray the air fryer basket with olive oil spray to prevent sticking.
  8. Arrange Egg Rolls: Place the egg rolls in a single layer inside the basket and spray the tops with a light coat of olive oil spray.
  9. Air Fry: Cook the egg rolls at 375°F (190°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve: Remove the egg rolls from the air fryer once cooked and serve immediately.
