Ingredients
Scale
Lasagna Shells
- 4 cooked lasagna noodles (about 2 sheets), cut into thirds
Cheese Filling
- 1 cup ricotta cheese
- 1 large egg
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
Toppings & Sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup marinara sauce
Other
- Cooking spray or olive oil, for greasing
Instructions
- Preheat and Prepare Pan: Preheat the air fryer to 360 °F (≈180 °C). Lightly grease a six‑cup silicone muffin pan or mini oven-safe ramekins with cooking spray or olive oil to prevent sticking.
- Mix Filling: In a bowl, whisk together the ricotta cheese, egg, Italian seasoning, salt, and pepper until the mixture is smooth and well combined.
- Add Marinara Sauce to Cups: Spoon about 1 tablespoon of marinara sauce into each greased cup, spreading it evenly to create a flavorful base layer.
- Form Noodle Bowls: Coil the trimmed strips of cooked lasagna noodles into each cup, pressing them firmly against the sides to form mini noodle bowls or shells.
- Fill with Cheese Mixture: Fill each noodle shell with the ricotta and egg mixture, then generously top with shredded mozzarella and a sprinkle of Parmesan cheese.
- Air Fry: Place the muffin pan or ramekins into the preheated air fryer. Cook at 360 °F for 10–12 minutes or until the edges become crisp, the cheese melts fully, and the bottoms turn golden brown.
- Cool and Unmold: Allow the lasagna frittas to cool for a few minutes to set and become firm. Carefully unmold them from the pan to keep their shape intact.
- Serve: Serve the frittas warm with extra marinara sauce either drizzled sparingly or on the side for dipping, enhancing their rich flavors.
Notes
- Ensure cooked lasagna noodles are fully drained and slightly cooled before shaping to prevent tearing.
- Use silicone muffin pans or oven-safe ramekins for easy removal of frittas after cooking.
- Adjust Italian seasoning and salt to taste depending on your cheese’s saltiness.
- These can be made ahead and reheated in the air fryer for a few minutes before serving to regain crispiness.
- For a gluten-free option, use gluten-free lasagna noodles.
- Serve immediately after cooling to enjoy optimal texture and flavor.
