Description

Amish Chicken & Noodles is a comforting American classic featuring tender shredded chicken and wide egg noodles simmered in a flavorful seasoned chicken broth. This hearty, soul-warming dish is perfect for family dinners and serves as a nostalgic throwback to traditional Amish cooking.

Ingredients

Scale

Chicken and Broth

  • 1 whole rotisserie chicken or 3 cups cooked shredded chicken
  • 6 cups chicken broth
  • 1 cup water

Noodles and Seasonings

  • 12 oz egg noodles (preferably wide Amish-style)
  • 1 tablespoon butter
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Thickening and Garnish

  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Chopped parsley for garnish (optional)

Instructions

  1. Boil Broth and Cook Noodles: In a large pot, bring the chicken broth and water to a boil. Add the egg noodles and cook uncovered according to package directions, usually 8–10 minutes, until tender.
  2. Season the Broth: Reduce the heat to a simmer. Stir in the butter, poultry seasoning, onion powder, garlic powder, salt, and pepper to infuse the broth with rich flavors.
  3. Add Chicken and Simmer: Add the shredded chicken to the pot and let it simmer gently for another 5–10 minutes to heat through and allow the flavors to meld together beautifully.
  4. Thicken the Broth (Optional): If a thicker consistency is desired, stir in the cornstarch slurry made by mixing cornstarch with water. Cook for an additional 2–3 minutes until the broth thickens slightly.
  5. Serve and Garnish: Ladle the noodles and chicken into bowls and garnish with chopped fresh parsley if desired. Serve hot and enjoy the comforting flavors.

Notes

  • This dish is often served over mashed potatoes for an extra comforting meal.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheat well.
  • Use homemade chicken broth for a deeper, richer flavor if available.
