Ingredients
Scale
Chicken and Broth
- 1 whole rotisserie chicken or 3 cups cooked shredded chicken
- 6 cups chicken broth
- 1 cup water
Noodles and Seasonings
- 12 oz egg noodles (preferably wide Amish-style)
- 1 tablespoon butter
- 1 teaspoon poultry seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Thickening and Garnish
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
- Chopped parsley for garnish (optional)
Instructions
- Boil Broth and Cook Noodles: In a large pot, bring the chicken broth and water to a boil. Add the egg noodles and cook uncovered according to package directions, usually 8–10 minutes, until tender.
- Season the Broth: Reduce the heat to a simmer. Stir in the butter, poultry seasoning, onion powder, garlic powder, salt, and pepper to infuse the broth with rich flavors.
- Add Chicken and Simmer: Add the shredded chicken to the pot and let it simmer gently for another 5–10 minutes to heat through and allow the flavors to meld together beautifully.
- Thicken the Broth (Optional): If a thicker consistency is desired, stir in the cornstarch slurry made by mixing cornstarch with water. Cook for an additional 2–3 minutes until the broth thickens slightly.
- Serve and Garnish: Ladle the noodles and chicken into bowls and garnish with chopped fresh parsley if desired. Serve hot and enjoy the comforting flavors.
Notes
- This dish is often served over mashed potatoes for an extra comforting meal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheat well.
- Use homemade chicken broth for a deeper, richer flavor if available.
