Taco Shells

- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy cream

Instructions
- Prepare Taco Shells: Preheat your oven to 400°F or heat a skillet over medium heat if you prefer pan-frying. Lightly brush both sides of each tortilla with melted butter. Mix the granulated sugar and ground cinnamon, then sprinkle this cinnamon sugar mixture evenly over the buttered tortillas.
- Shape and Cook Shells: To bake, drape each tortilla over two rungs of an oven rack or fold and balance them between two inverted muffin tin cups to create a taco shape. Bake for 6 to 8 minutes until the tortillas are golden and crisp. Alternatively, for pan-frying, heat the vegetable oil in a skillet and fry each tortilla for 1 to 2 minutes per side until golden and crisp. Set the shells aside to cool.
- Make Cheesecake Filling: In a bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to achieve a light, fluffy cheesecake filling.
- Assemble Tacos: Spoon or pipe the cheesecake filling into the cooled taco shells, filling them generously. Top with chopped apple pie filling, drizzle caramel sauce over the top, and sprinkle with extra cinnamon sugar if desired.
