Ingredients
Scale
Blondie Batter
- 1 cup salted butter, melted
- 1 ½ cups packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 2 cups all-purpose flour
- 1 cup mashed banana (about 2 ½ medium-sized bananas)
Brown Butter Frosting
- ¼ cup salted butter
- ½ cup packed light brown sugar
- 2 tablespoons milk
- 1 cup powdered sugar
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper, then spray the parchment with cooking spray to prevent sticking. Set aside.
- Make the blondie batter: In the bowl of an electric stand mixer, combine the melted butter and 1 ½ cups light brown sugar. Mix until well combined. Add in the eggs and vanilla extract, mixing until fully incorporated. Stir in the salt, all-purpose flour, and mashed bananas until the batter is smooth and evenly mixed. Spread the batter evenly into the prepared baking pan.
- Bake the blondies: Place the pan in the preheated oven and bake for approximately 25 minutes, or until the center of the blondies is set and a toothpick inserted comes out mostly clean. Remove from the oven and allow the blondies to cool completely in the pan before frosting.
- Prepare the brown butter frosting: In a medium saucepan over medium-low heat, melt ¼ cup of salted butter. Cook the butter until it just begins to brown and release a nutty, aromatic scent—this usually takes a couple of minutes. Be careful not to burn it. Remove from heat and immediately stir in ½ cup light brown sugar and 2 tablespoons of milk. Continue stirring until the mixture comes to a gentle boil. Remove from the heat and let cool for 5 minutes.
- Finish the frosting: Once slightly cooled, whisk in 1 cup powdered sugar until the frosting is smooth and well combined.
- Frost the blondies: Spread the brown butter frosting evenly over the cooled blondies. Allow the frosting to set before cutting the blondies into 24 squares. Serve and enjoy!
Notes
- Use ripe bananas for the best natural sweetness and flavor.
- Be attentive when browning butter to avoid burning it, as this will affect the frosting flavor.
- Allow the blondies to cool fully before frosting to prevent frosting from melting.
- You can store the blondies in an airtight container at room temperature for up to 3 days.
- For a nuttier variation, consider folding in chopped walnuts or pecans into the batter.
