Description

A delicious and hearty BBQ Chicken Cauliflower Rice Casserole that combines tender chicken, flavorful BBQ sauce, and nutritious cauliflower rice. This baked casserole offers a low-carb twist on classic comfort food, perfect for a satisfying family dinner.

Ingredients

Scale

Protein and Vegetables

  • 2 large boneless, skinless chicken breasts, cooked and chopped into small pieces
  • 1 (8 oz) bag frozen cauliflower rice, defrosted
  • ½ yellow onion, diced
  • 3 cloves garlic, minced

Other Ingredients

  • 2 tablespoons olive oil
  • ¾ cup BBQ sauce
  • 2 large eggs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili powder
  • ¾ cup shredded cheddar cheese

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 400°F (200°C) and grease an 8×8 inch baking dish with nonstick spray to prevent sticking.
  2. Combine Chicken and Cauliflower Rice: In a large bowl, mix the cooked and chopped chicken breast with the defrosted cauliflower rice, ensuring they are evenly combined.
  3. Sauté Onion and Garlic: Heat olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Mix Ingredients and Bake: Add the sautéed onion and garlic mixture to the bowl with chicken and cauliflower rice. Stir in BBQ sauce, eggs, salt, black pepper, and chili powder until well combined. Pour the mixture into the prepared baking dish and evenly sprinkle shredded cheddar cheese on top. Bake for 45 minutes, or until the casserole is set and the cheese is golden brown.
  5. Cool and Serve: Remove the casserole from the oven and let it cool for 5 minutes before serving to allow it to set properly for easier slicing and serving.

Notes

  • Use cooked chicken to save time; leftover rotisserie chicken works great.
  • Make sure to defrost cauliflower rice completely to avoid excess moisture in the casserole.
  • For a spicier kick, increase the chili powder or add a pinch of cayenne pepper.
  • This dish can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat leftovers in the oven or microwave before serving.
