Instructions

  1. Sauté Vegetables and Meat: In a large skillet, heat over medium heat and sauté the diced onions and bell peppers until softened, about 3 to 4 minutes. If using chicken or ground beef, add it to the skillet and cook until heated through, stirring occasionally.
  2. Mix Filling Ingredients: Stir in the cooked rice, chili powder, cumin, salt, and black pepper into the skillet with the vegetables and meat. Mix well to combine all the flavors evenly. Remove from heat and allow the mixture to cool slightly before assembling burritos.
  3. Assemble Burritos: Lay one flour tortilla flat on a clean surface. Spread a portion of the rice and meat mixture down the center of the tortilla, then sprinkle with shredded cheddar cheese. Add a spoonful of salsa and a sprinkle of fresh cilantro on top.
  4. Wrap Burritos: Fold in the sides of the tortilla, then roll it tightly from one end to the other to securely enclose the filling. Wrap each burrito individually in aluminum foil or plastic wrap to prepare for freezing.
