- 1 tablespoon oyster sauce (optional)

- 1 teaspoon sugar

Instructions
- Prepare the Beef and Mushrooms: Lay the thinly sliced beef flat on a clean surface. Take small bunches of enoki mushrooms, about 10-15 mushrooms per roll, and place them at one end of each beef slice.
- Roll the Beef: Carefully roll the beef around the enoki mushrooms, securing them with toothpicks if needed to keep the rolls intact. Repeat this process until all beef slices are rolled up.
- Make the Sauce: In a small bowl, mix together soy sauce, sesame oil, oyster sauce (if using), rice vinegar, sugar, minced garlic, and grated ginger. Stir well until the sugar dissolves and the sauce is evenly combined.
- Heat the Pan: Place a large skillet or frying pan over medium-high heat and add the vegetable oil. Allow it to heat until shimmering but not smoking.
- Cook the Beef Rolls: Add the beef rolls to the hot skillet. Sear them on all sides, turning occasionally, for about 5-6 minutes until the beef is fully cooked and nicely browned. If the beef browns too rapidly, adjust heat to medium to prevent burning.
- Add the Sauce: Pour the prepared sauce over the cooked beef rolls in the skillet. Let everything simmer together for 1-2 minutes, spooning the sauce over the rolls as it thickens slightly and flavors meld.
- Serve: Remove the beef rolls from the skillet and discard any toothpicks used. Plate the rolls hot for serving.
