  • 1 small onion, finely chopped
  • 1½ cups finely diced beef (such as sirloin or chuck)
  • 1 cup peeled and finely diced potatoes
  • ½ cup diced carrots
  • ½ cup diced rutabaga or turnip
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Finish

  • 1 egg, beaten (for egg wash)


Instructions

  1. Make the dough: In a large bowl, whisk together the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time and mix gently just until the dough comes together. Divide the dough in two, wrap each portion in plastic wrap, and chill for at least 30 minutes.
  2. Prepare the filling: While the dough chills, heat the vegetable oil in a skillet over medium heat. Add the finely chopped onion and sauté until softened, about 3 minutes. Add the diced beef, potatoes, carrots, rutabaga, salt, and pepper. Cook, stirring occasionally, for 5–7 minutes until the beef is no longer pink and the vegetables are slightly tender. Remove from heat and let the filling cool completely.
  3. Assemble the pasties: Preheat the oven to 375°F (190°C). On a floured surface, roll out one dough ball into a 10-inch circle. Place about ¾ cup of the cooled filling on one half of the circle, leaving a ½-inch border all around. Fold the dough over the filling to form a half-moon shape and firmly crimp the edges to seal. Repeat with the remaining dough and filling.
  4. Brush and bake: Place the assembled pasties on a parchment-lined baking sheet. Brush the tops with the beaten egg to create a golden, glossy finish. Bake in the preheated oven for 35–40 minutes, or until the crust is golden brown and crisp.
  5. Cool and serve: Remove the pasties from the oven and allow them to cool slightly before serving. This allows the filling to set and makes them easier to handle.
