Ingredients
Scale
Cupcakes
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- ½ cup whole milk
- 2 tsp vanilla extract
Chocolate Frosting
- â…“ cup unsweetened cocoa powder
- ½ cup unsalted butter, softened
- 2 tbsp whole milk
- 3 cups confectioners’ sugar
Decoration
- Chocolate shavings or crispy noodles
- Candy eggs
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners to ensure easy removal and clean baking.
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until the mixture becomes light and fluffy, about 3-4 minutes. This step introduces air to help cupcakes rise.
- Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition to fully incorporate them. Then mix in the vanilla extract for flavor.
- Combine Dry and Wet Ingredients: Gradually add the flour and baking powder, alternating with the milk, starting and ending with the flour mixture. Stir until just combined, being careful not to overmix to keep cupcakes tender.
- Fill and Bake: Fill each cupcake liner about two-thirds full with batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and cool completely on a wire rack.
- Make the Frosting: In a mixing bowl, whip together the softened butter, cocoa powder, and whole milk until smooth. Gradually add confectioners’ sugar and continue to beat until frosting is light and fluffy.
- Frost the Cupcakes: Generously frost the cooled cupcakes with the chocolate frosting using a spatula or piping bag.
- Create Bird’s Nests and Decorate: Form nests on top of each cupcake with chocolate shavings or crispy noodles placed in a circular mound. Place candy eggs delicately in the center to complete the nest look.
Notes
- Ensure butter is softened to room temperature for easy creaming.
- Do not overmix the batter to maintain tender cupcakes.
- Use a toothpick to test doneness; it should come out clean or with a few moist crumbs.
- Chocolate shavings can be made by shaving a chocolate bar with a vegetable peeler.
- Store cupcakes in an airtight container at room temperature for up to 3 days.
