Description

This blackberry balsamic and brie grilled cheese is a sweet and savory twist on a classic comfort food. Creamy brie melts perfectly between slices of crispy golden bread, layered with juicy blackberries and a rich balsamic glaze for a gourmet sandwich that’s bursting with flavor.

Bread and Cheese

  • 8 slices of sourdough or artisan bread
  • 6 ounces brie cheese (rind removed and sliced)

Fruit and Glaze

  • 1 cup fresh blackberries (lightly mashed)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • pinch of salt

  • 2 tablespoons unsalted butter (softened)


Instructions

  1. Prepare the Balsamic Glaze: In a small saucepan over medium heat, combine the balsamic vinegar, honey, and a pinch of salt. Cook for 4–5 minutes, stirring often, until slightly thickened. Remove from heat and let cool.
  2. Mash the Blackberries: Lightly mash the blackberries in a bowl, just enough to break them up while keeping some texture intact.
  3. Assemble the Sandwiches: Lay out the bread slices and spread butter on one side of each slice. On the unbuttered side of half the slices, layer brie slices, a spoonful of mashed blackberries, and a drizzle of the cooled balsamic glaze. Top with the remaining bread slices, buttered side out.
  4. Grill the Sandwiches: Heat a nonstick skillet or griddle over medium heat. Grill sandwiches for 3–4 minutes per side, pressing down slightly, until the bread is golden brown and the cheese has melted.
  5. Serve: Slice the sandwiches and serve warm for the best flavor and texture.

  • Use a mild sourdough or rustic country bread to hold up to the melted brie and juicy berries.
