Description

This classic Blueberry Cobbler features a buttery, tender batter topped with juicy, fresh blueberries infused with lemon zest and juice. Baked in a cast iron skillet, the cobbler develops a golden crust and bubbling fruit filling, perfect served warm with vanilla ice cream.

Ingredients

Scale

For the Batter

  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • â…“ cup granulated sugar
  • ¼ cup packed brown sugar
  • ¼ tsp salt
  • â…› tsp cinnamon
  • 1 cup whole milk
  • 1 large egg
  • 1 tsp vanilla extract

For the Blueberry Topping

  • 1 lb fresh blueberries
  • 2 Tbsp sugar
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice

Instructions

  1. Preheat and melt butter: Preheat your oven to 350ºF (175ºC). Place the ½ cup unsalted butter in a 10-inch cast iron skillet and put it in the oven until the butter is fully melted.
  2. Mix dry ingredients: In a large bowl, whisk together 1 cup all-purpose flour, 2 teaspoons baking powder, ⅓ cup granulated sugar, ¼ cup packed brown sugar, ¼ teaspoon salt, and ⅛ teaspoon cinnamon until well combined.
  3. Combine wet ingredients: In a separate bowl, whisk 1 cup whole milk, 1 large egg, and 1 teaspoon vanilla extract. Pour this wet mixture into the dry ingredients and stir until the batter is smooth and evenly mixed.
  4. Pour batter into skillet: Carefully pour the batter over the melted butter in the cast iron skillet, distributing it evenly.
  5. Prepare blueberry topping: In a medium bowl, toss together 1 pound fresh blueberries, 2 tablespoons sugar, 1 teaspoon lemon zest, and 1 tablespoon lemon juice until the blueberries are coated well.
  6. Add topping and bake: Spoon the blueberry mixture evenly over the batter in the skillet. Bake in the preheated oven for 45 to 50 minutes, or until the cobbler is golden brown and bubbly.
  7. Cool and serve: Allow the cobbler to cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream.

Notes

  • Use fresh blueberries for the best flavor and texture. Frozen blueberries can be used but may release more liquid.
  • If you don’t have a cast iron skillet, use an oven-safe baking dish but reduce baking time slightly as the heat distribution may vary.
  • Letting the cobbler cool for 10-15 minutes helps it set and makes serving easier.
  • Can be served with whipped cream or plain yogurt as an alternative to ice cream.
  • For a gluten-free option, substitute the all-purpose flour with a gluten-free flour blend.
