For the Batter

Instructions
- Preheat and melt butter: Preheat your oven to 350ºF (175ºC). Place the ½ cup unsalted butter in a 10-inch cast iron skillet and put it in the oven until the butter is fully melted.
- Mix dry ingredients: In a large bowl, whisk together 1 cup all-purpose flour, 2 teaspoons baking powder, ⅓ cup granulated sugar, ¼ cup packed brown sugar, ¼ teaspoon salt, and ⅛ teaspoon cinnamon until well combined.
- Combine wet ingredients: In a separate bowl, whisk 1 cup whole milk, 1 large egg, and 1 teaspoon vanilla extract. Pour this wet mixture into the dry ingredients and stir until the batter is smooth and evenly mixed.
- Pour batter into skillet: Carefully pour the batter over the melted butter in the cast iron skillet, distributing it evenly.
- Prepare blueberry topping: In a medium bowl, toss together 1 pound fresh blueberries, 2 tablespoons sugar, 1 teaspoon lemon zest, and 1 tablespoon lemon juice until the blueberries are coated well.
- Add topping and bake: Spoon the blueberry mixture evenly over the batter in the skillet. Bake in the preheated oven for 45 to 50 minutes, or until the cobbler is golden brown and bubbly.
- Cool and serve: Allow the cobbler to cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream.
