Description

A delicious and hearty Breakfast Club Sandwich featuring crispy bacon, runny fried eggs, fresh vegetables, and creamy avocado spread, layered between toasted whole grain bread slices. Perfect for a satisfying morning meal with a delightful mix of flavors and textures.

  • 3 slices of whole grain bread
  • 2 tablespoons mayonnaise
  • 1 avocado, mashed

  • 1 ripe tomato, thinly sliced
  • Fresh lettuce leaves

Instructions

  1. Cook the bacon: Begin by cooking the bacon in a skillet over medium heat until crispy. Once done, drain on paper towels and set aside to remove excess grease.
  2. Fry the eggs: In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks remain runny. Flip if desired to cook yolks more firmly.
  3. Toast the bread: Toast the bread slices until golden brown using a toaster or oven broiler for added crunch.
  4. Spread mayonnaise: Spread mayonnaise evenly on one side of each toasted bread slice to add flavor and moisture.
  5. Assemble first layer: On the first slice of bread, layer fresh lettuce leaves, thinly sliced tomato, and crispy bacon strips.
  6. Add second bread slice & avocado: Cover the first layer with the second bread slice, mayonnaise side down, then spread mashed avocado on the exposed side.
