Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit, preparing it to bake the taquitos until golden and crispy.
- Cook Sausage: Heat a skillet over medium heat and cook the fully cooked sausage links until they are warmed through. Once done, remove the sausages from the skillet but leave the grease in the pan to cook the eggs.
- Make Scrambled Eggs: In a bowl, whisk together the eggs with a splash of water or milk and season with salt and pepper to taste. Pour the mixture into the skillet with sausage grease and cook, stirring gently until the eggs are fully cooked and fluffy. Add spinach if using, and cook just until wilted.
- Warm Tortillas: Heat the tortillas in a microwave or on a skillet until they become pliable and easy to roll without cracking.
- Assemble Taquitos: Lay out each warm tortilla flat, evenly distribute the scrambled eggs among them, sprinkle cheese over the eggs, and place one sausage link on top. Carefully roll each tortilla tightly and place them seam side down on a baking sheet.
