Instructions

  1. Prepare the Filling: Combine shredded chicken, cream cheese, buffalo sauce, ranch or blue cheese dressing, shredded cheddar cheese, and finely chopped green onions in a large mixing bowl. Mix thoroughly until the ingredients are creamy and evenly incorporated.
  2. Fill the Wrappers: Lay one egg roll wrapper flat on a clean surface with a corner facing you. Spoon 2-3 tablespoons of the buffalo chicken filling into the center of the wrapper.
  3. Roll the Egg Rolls: Fold the bottom corner of the wrapper over the filling, then fold in the side corners. Roll tightly away from you towards the top corner. Moisten the top corner with water to seal the egg roll securely. Repeat with the remaining wrappers and filling.
  4. Fry Method: Heat 2 inches of vegetable or canola oil in a deep skillet to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes per side until they turn golden brown and crisp. Remove and drain on paper towels to absorb excess oil.
  5. Bake Method: Preheat your oven to 425°F (220°C). Place the egg rolls on a parchment-lined baking sheet and lightly spray them with cooking spray. Bake for 15-20 minutes, flipping halfway through the cooking time, until they are golden and crispy.
