Alabama White Sauce

- Salt and pepper, to taste
Instructions
- Marinate the chicken: Rub the chicken breasts or thighs with olive oil, then season evenly with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper. Allow the chicken to marinate at room temperature for 20–30 minutes to let the flavors penetrate.
- Grill the chicken: Preheat your grill or grill pan to medium-high heat. Place the marinated chicken on the grill and cook for 5–7 minutes on each side, or until the chicken is fully cooked through and develops a slight char for smoky flavor.
- Make the Alabama white sauce: In a small bowl, whisk together the mayonnaise, apple cider vinegar, prepared horseradish, Dijon mustard, garlic powder, cayenne pepper (if using), salt, and pepper until smooth. Chill the sauce in the refrigerator until ready to serve to let the flavors meld.
