For the Stuffed Mushrooms:
- 12 large white mushrooms, stems removed
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
For the Cheese Pull:
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1 tablespoon butter
Instructions
- Prepare the shrimp: In a bowl, toss the shrimp with olive oil, Cajun seasoning, garlic powder, paprika, salt, and pepper. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes per side, until pink and cooked through. Remove from heat and chop the shrimp into small pieces.
- Prepare the mushrooms: Preheat the oven to 375°F (190°C). Arrange the mushroom caps on a baking sheet lined with parchment paper or foil. Set aside.
- Make the filling: In a bowl, combine the chopped shrimp, cream cheese, Parmesan cheese, and mozzarella cheese. Mix well until smooth and creamy.
- Stuff the mushrooms: Spoon the shrimp mixture into each mushroom cap, pressing gently to pack the filling in.
- Bake the mushrooms: Place the stuffed mushrooms in the preheated oven and bake for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
- Prepare the cheese pull: In a small bowl, combine the shredded mozzarella and cheddar cheese. Place a small amount of the cheese mixture on top of each stuffed mushroom before baking for the last 5 minutes, allowing the cheese to melt and create a gooey cheese pull.
- Serve: Once baked, remove from the oven and sprinkle with fresh parsley for garnish. Serve immediately and enjoy the cheesy, Cajun-flavored goodness!
