- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

- 1/2 cup grated Gruyère cheese
- 1/4 cup crumbled goat cheese

- 1 egg (beaten, for egg wash)
Instructions
- Preheat and Prepare Pan: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Caramelize Onions: Heat olive oil in a large skillet over medium-low heat. Add thinly sliced onions, sugar, salt, and black pepper. Cook slowly, stirring occasionally, for 25 to 30 minutes until the onions become golden brown and caramelized, then stir in fresh thyme leaves and remove from heat.
- Prepare Puff Pastry: Roll out the thawed puff pastry slightly and place it on the prepared baking sheet. Score a 1-inch border around the edges with a knife without cutting through, and prick the center area all over with a fork to prevent excessive puffing.
- Assemble Tart: Spread the caramelized onions evenly within the scored border on the pastry. Sprinkle the grated Gruyère and crumbled goat cheese evenly over the onions.
- Apply Egg Wash and Bake: Brush the edges of the pastry with the beaten egg to give a glossy, golden finish. Bake in the preheated oven for 20 to 25 minutes, or until the pastry is puffed and golden brown.
- Cool and Serve: Allow the tart to cool slightly on a wire rack before slicing into six pieces and serving. Enjoy warm or at room temperature.
