Main Ingredients
- 1 large head cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
Optional Ingredients
- 2 tablespoons cream cheese for extra richness
- Chopped chives or green onions for garnish
Instructions
- Pulse Cauliflower: Place the cauliflower florets in a food processor and pulse until the pieces resemble small granules similar to grits.
- Cook Cauliflower: Transfer the processed cauliflower to a microwave-safe bowl and microwave for 5 to 6 minutes until tender, or alternatively steam it on the stovetop until soft.
- Sauté Garlic: In a medium saucepan over medium heat, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
- Combine Ingredients: Add the cooked cauliflower, heavy cream, and cream cheese if using to the saucepan. Stir well and cook for 3 to 5 minutes until the mixture is heated through and creamy.
- Add Cheeses: Stir in the shredded cheddar and grated Parmesan cheeses until they melt smoothly into the mixture.
- Season: Season the grits with salt, black pepper, and smoked paprika. Adjust the consistency with a splash of cream if needed.
- Serve: Serve the cauliflower grits warm, garnished with chopped chives or green onions if desired.
Notes
- For a smoother texture, briefly blend the finished mixture with an immersion blender.
- You can substitute half-and-half for heavy cream to lighten the dish.
- Pairs well with shrimp, grilled chicken, or sautéed vegetables for a complete meal.
