Instructions
- Prepare Cauliflower Rice: Grate the cauliflower or pulse it in a food processor until it mimics the texture of rice. Lightly sauté the cauliflower rice in a dry skillet over medium heat for 3-5 minutes until slightly softened, then set it aside to cool.
- Mix Vegetables and Herbs: In a large bowl, combine the cooled cauliflower rice, halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped parsley, and chopped mint.
- Make Dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper thoroughly to create a tangy, flavorful dressing.
- Toss Salad: Pour the dressing over the cauliflower and vegetable mixture, tossing gently to ensure everything is well coated with the dressing.
- Adjust and Serve: Taste the tabbouleh and adjust seasoning with additional salt or pepper if needed. Serve chilled or at room temperature for best flavor.
