Description

A fresh and healthy twist on the traditional Middle Eastern tabbouleh, this Cauliflower Rice Tabbouleh replaces bulgur with grated cauliflower for a low-carb, gluten-free alternative. Combining vibrant cherry tomatoes, cucumber, and fresh herbs with a zesty lemon and garlic dressing, this salad is perfect as a light lunch or a side dish, ready in just 20 minutes.

Ingredients

Scale

Cauliflower Rice

  • 1 medium head cauliflower, grated or processed into “rice”

Vegetables and Herbs

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Prepare Cauliflower Rice: Grate the cauliflower or pulse it in a food processor until it mimics the texture of rice. Lightly sauté the cauliflower rice in a dry skillet over medium heat for 3-5 minutes until slightly softened, then set it aside to cool.
  2. Mix Vegetables and Herbs: In a large bowl, combine the cooled cauliflower rice, halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped parsley, and chopped mint.
  3. Make Dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper thoroughly to create a tangy, flavorful dressing.
  4. Toss Salad: Pour the dressing over the cauliflower and vegetable mixture, tossing gently to ensure everything is well coated with the dressing.
  5. Adjust and Serve: Taste the tabbouleh and adjust seasoning with additional salt or pepper if needed. Serve chilled or at room temperature for best flavor.

Notes

  • Light sautéing the cauliflower rice softens it slightly but still keeps a pleasant crunch.
  • This dish is best served fresh but can be stored in the refrigerator for up to 2 days.
  • For a nuttier flavor, you can toast the chopped herbs lightly before adding.
  • Adding a pinch of ground cumin or sumac can enhance the Middle Eastern flavor profile.
  • This recipe is naturally gluten-free and low in carbohydrates, suitable for those on gluten-free or low-carb diets.
