Description

A creamy and tangy cauliflower salad featuring tender steamed cauliflower, chopped boiled eggs, and a zesty dressing made from mayonnaise, mustard, and pickle relish. This salad is perfect as a refreshing side dish that can be prepared ahead and served cold for easy entertaining or weekday meals.

Ingredients

Scale

Salad Ingredients

  • 1 head cauliflower, steamed or boiled until tender, cut into bite-sized pieces
  • 6 boiled eggs (yolks mashed, whites chopped)
  • 1/3 cup mayonnaise or Miracle Whip (regular)
  • 3 tablespoons mustard
  • 3 tablespoons pickle relish
  • 1/8 cup chopped onion (or more, if desired)
  • Salt and pepper to taste

Optional Garnish

  • Sliced boiled eggs
  • Parsley

Instructions

  1. Prepare Cauliflower: Steam or boil cauliflower florets until they become tender but are not mushy. Once cooked, drain any excess water and allow the cauliflower to cool down completely.
  2. Prepare Eggs: Boil the eggs, peel off the shells, then separate the yolks from the whites. Mash the yolks in a bowl and chop the whites finely for mixing.
  3. Combine Ingredients: In a large mixing bowl, add the cooled cauliflower, mashed egg yolks, chopped egg whites, mayonnaise, mustard, pickle relish, and chopped onion. Stir thoroughly to evenly combine all ingredients.
  4. Season the Salad: Add salt and pepper to taste. If needed, adjust the amount of mayonnaise and mustard to reach your preferred consistency and flavor balance.
  5. Garnish: Transfer the salad to a serving dish and optionally garnish with sliced boiled eggs and fresh parsley for an enhanced presentation and flavor.
  6. Chill: Cover the salad and refrigerate overnight to allow the flavors to meld together. Serve the salad cold for best taste and texture.

Notes

  • The cauliflower should be cooked until tender but still firm to prevent the salad from becoming mushy.
  • You can use either mayonnaise or Miracle Whip based on your taste preference; Miracle Whip adds a bit of sweetness.
  • Chilling the salad overnight improves flavor blending but if short on time, refrigerate for at least 2 hours before serving.
  • Optional garnishes like sliced boiled eggs and parsley enhance the look and add a fresh taste.
  • Adjust seasoning with salt and pepper incrementally to your liking.
