Ingredients
Scale
Meatloaf Mixture
- 1 1/2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 2 large eggs
- 1/3 cup ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
Topping
- 1/4 cup ketchup
- 1 tablespoon brown sugar
- 1 teaspoon yellow mustard
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) and lightly grease a loaf pan or line a baking sheet with parchment paper to prevent sticking.
- Soak breadcrumbs: In a large mixing bowl, combine breadcrumbs with milk and let them soak for 2 minutes, allowing the breadcrumbs to soften.
- Combine ingredients: Add ground beef, finely chopped onion, minced garlic, eggs, ketchup, yellow mustard, Worcestershire sauce, salt, and black pepper to the soaked breadcrumbs. Mix gently until just combined to avoid overworking the meat.
- Incorporate cheese: Fold in the shredded cheddar cheese evenly throughout the meat mixture for a cheesy surprise inside the meatloaf.
- Shape and prepare: Form the mixture into a loaf shape and place it onto the prepared loaf pan or baking sheet.
- Prepare topping: In a small bowl, mix together ketchup, brown sugar, and yellow mustard. Spread this glaze evenly over the top of the meatloaf.
- Bake the meatloaf: Place the meatloaf in the oven and bake for 50 to 60 minutes, or until an internal temperature of 160°F (71°C) is reached ensuring it’s fully cooked.
- Rest and serve: Allow the meatloaf to rest for 10 minutes after baking. This helps juices redistribute resulting in a moist slice when serving.
Notes
- For a more authentic cheeseburger taste, add diced pickles into the meat mixture or sprinkle extra shredded cheddar on top during the last 10 minutes of baking.
- This meatloaf pairs wonderfully with mashed potatoes or roasted vegetables for a complete meal.
- Leftover meatloaf slices make excellent sandwiches the next day.
