Instructions
- Prep the chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet and drizzle with olive oil. Season the chicken with fajita seasoning, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Rub the seasoning into the chicken so it’s well coated.
- Prepare the veggies: Scatter the sliced bell pepper and red onion around the chicken on the baking sheet, distributing them evenly for roasting alongside the chicken.

- Add the cheese: Once the chicken is cooked through, remove the baking sheet from the oven and sprinkle the shredded cheese evenly over the chicken breasts. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
