Beef Mixture

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (8 oz) tomato paste
  • 1/2 cup beef broth (or water)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Pasta

  • 12 oz egg noodles (or any pasta of choice)

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk (whole or 2%)
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream (optional, for extra creaminess)
  • Salt and pepper to taste


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. Prepare the Beef Mixture: In a large skillet over medium heat, brown the ground beef with chopped onion and minced garlic until beef is fully cooked and onion is softened. Drain excess fat if necessary.
  3. Add Sauce Ingredients: Stir in the tomato sauce, tomato paste, beef broth, dried oregano, dried basil, salt, and pepper. Simmer for about 10 minutes to blend the flavors and thicken the sauce slightly.
  4. Make the Cheese Sauce: In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes without browning to form a roux. Gradually whisk in the milk and cook until the sauce thickens, about 5 minutes. Remove from heat and stir in 1 cup of shredded cheddar cheese and Parmesan cheese until melted. Optionally, add sour cream for extra creaminess and season with salt and pepper.
  5. Combine Pasta and Beef Sauce: In a large mixing bowl, combine the cooked noodles and beef mixture. Stir well to combine evenly.
  6. Assemble the Casserole: Preheat the oven to 350°F (175°C). Pour half of the noodle and beef mixture into a greased 9×13-inch baking dish. Spread half of the cheese sauce over it. Repeat with the remaining noodle and beef mixture and top with the remaining 1 cup shredded cheddar cheese.
