Beef Mixture
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce

- 1 teaspoon dried basil

- 12 oz egg noodles (or any pasta of choice)
Cheese Sauce
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk (whole or 2%)
- 2 cups shredded cheddar cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream (optional, for extra creaminess)
- Salt and pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
- Prepare the Beef Mixture: In a large skillet over medium heat, brown the ground beef with chopped onion and minced garlic until beef is fully cooked and onion is softened. Drain excess fat if necessary.
- Add Sauce Ingredients: Stir in the tomato sauce, tomato paste, beef broth, dried oregano, dried basil, salt, and pepper. Simmer for about 10 minutes to blend the flavors and thicken the sauce slightly.
- Make the Cheese Sauce: In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes without browning to form a roux. Gradually whisk in the milk and cook until the sauce thickens, about 5 minutes. Remove from heat and stir in 1 cup of shredded cheddar cheese and Parmesan cheese until melted. Optionally, add sour cream for extra creaminess and season with salt and pepper.
- Combine Pasta and Beef Sauce: In a large mixing bowl, combine the cooked noodles and beef mixture. Stir well to combine evenly.
- Assemble the Casserole: Preheat the oven to 350°F (175°C). Pour half of the noodle and beef mixture into a greased 9×13-inch baking dish. Spread half of the cheese sauce over it. Repeat with the remaining noodle and beef mixture and top with the remaining 1 cup shredded cheddar cheese.
- Bake the Casserole: Bake uncovered for 25-30 minutes, or until the casserole is bubbly and the cheese on top is melted and golden brown.
- Serve: Allow the casserole to cool for a few minutes before serving for easier slicing and better flavor melding. Serve warm.
