Ingredients
Scale
Meat and Spices
- 1 tbsp olive oil
- 1 lb ground beef
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- Salt and pepper, to taste
Vegetables and Cheese
- 2 cups diced potatoes (peeled and chopped small)
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
Wrap and Toppings
- 4 large flour tortillas
- 1/2 cup sour cream or Greek yogurt (optional)
- 1/2 cup salsa or taco sauce (optional)
- 2 tbsp chopped cilantro (optional)
Instructions
- Cook Potatoes and Onions: Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden and tender, about 12–15 minutes. Stir in diced onion halfway through cooking to soften and develop flavor.
- Brown Ground Beef: In another pan, brown the ground beef over medium heat until no longer pink. Drain any excess fat to keep the filling from being greasy.
- Season the Beef: Add ground cumin, chili powder, smoked paprika, onion powder, salt, and pepper to the beef. Stir well and cook for an additional 2–3 minutes to blend the spices into the meat.
- Combine Filling Ingredients: Mix the cooked potatoes and onions with the seasoned beef in the same pan. Stir in shredded cheddar and Monterey Jack cheese while the mixture is still warm to allow the cheese to melt slightly, creating a cohesive filling.
- Warm Tortillas: Heat the flour tortillas in a dry pan or microwave until they are soft and pliable, making them easier to roll without cracking.
- Assemble Burritos: Evenly divide the cheesy beef-potato mixture among the tortillas. Add optional toppings such as sour cream, salsa, and chopped cilantro for extra flavor and freshness.
- Roll Burritos: Fold in the sides of each tortilla and roll it tightly to enclose the filling.
- Optional Toasting: For a crispy finish, place each burrito seam-side down in a heated skillet and toast for a few minutes until the outside is golden brown and sealed.
- Serve: Serve the burritos warm with additional toppings if desired. Enjoy your comforting and cheesy homemade burritos!
