Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly coat a 13×9” or 3-quart baking dish with cooking spray or butter to prevent sticking.
  2. Prepare Potatoes: Peel and cut the potatoes into cubes. Boil them in heavily salted water for about 10 minutes until tender but not falling apart. Drain thoroughly and set aside to cool slightly.
  3. Prepare Chicken: Cut the chicken breast into 1-inch pieces and set them aside.
  4. Mix Dairy and Seasoning: In a large bowl, combine the diced onion, cottage cheese, sour cream, parmesan cheese, chopped parsley, cayenne pepper, salt, and black pepper. Stir everything until well mixed.
