Instructions

  1. Brown the Sausage: Heat olive oil in a large skillet over medium heat. Add sliced smoked sausage and cook until browned, about 4–5 minutes. Remove sausage and set aside.
  2. Sauté Vegetables: In the same skillet, add diced onion and bell pepper. Cook and stir until softened, about 3 minutes. Add minced garlic and cook for an additional 30 seconds.
  3. Add Rice and Liquids: Stir in the uncooked rice, chicken broth, paprika, and black pepper. Bring the mixture to a boil over medium-high heat.
  4. Simmer the Rice: Reduce heat to low, cover the skillet, and simmer for 18–20 minutes until the rice is cooked and the liquid has been absorbed.
  5. Combine and Melt Cheese: Stir the browned sausage back into the skillet along with the shredded cheddar cheese. Stir until the cheese is melted and everything is well combined.
  6. Rest and Garnish: Remove the skillet from heat and let it sit for a few minutes before serving. Garnish with chopped parsley if desired.
