Ingredients
Scale
Chicken and Seasoning
- 1/2 pound boneless skinless chicken breasts, cubed
- 1 packet (1 ounce) taco seasoning mix
- 1/2 cup ranch dressing
Pizza Base and Toppings
- 1 recipe homemade pizza dough OR 1 store-bought large flatbread pizza crust
- 1 can (16 ounces) refried beans
- 2 to 3 cups shredded cheddar cheese (or Colby and Monterey Jack cheese mix)
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
Instructions
- Prepare the dough: Prepare pizza dough according to directions, then let rest for at least 10 minutes covered. Press dough out evenly onto a large pizza pan. If using store-bought flatbread crust, simply remove from package and place on a pizza stone or pizza pan.
- Preheat oven: Set your oven to 450°F (232°C) to get it nice and hot for baking the pizza.
- Cook chicken: Heat a large non-stick skillet over medium-high heat. Add the cubed chicken and cook until no longer pink inside, about 10 minutes. Stir in the taco seasoning and ranch dressing; cook and stir for an additional 5 to 8 minutes. Remove from heat and let the chicken mixture rest while you prepare the rest.
- Prepare bean spread: Pour refried beans into a microwave-safe bowl and heat in the microwave for 1 minute. Stir well to loosen the beans.
- Assemble pizza: Spread the warmed refried beans evenly over the pizza crust. Evenly distribute the cooked chicken mixture on top of the beans. Sprinkle the shredded cheese generously over the chicken layer, then add chopped tomatoes, sliced black olives, and chopped green onions evenly across the top.
- Bake: Place the pizza in the preheated oven and bake for 12 to 15 minutes, or until the cheese has melted completely and the crust is cooked through.
- Serve: Carefully remove the hot pizza from the oven and let it rest for 5 minutes. Slice into pieces and serve immediately for the best taste.
- Store leftovers: Place any leftover pizza in an airtight container and refrigerate. Consume within 2 days for optimal freshness.
Notes
- For a quicker option, use store-bought flatbread crust instead of making dough from scratch.
- Adjust the amount of taco seasoning to taste depending on how spicy you prefer your pizza.
- Use a blend of cheeses for a richer flavor; Colby and Monterey Jack complement cheddar well.
- Microwaving the refried beans slightly helps to spread them evenly and enhances flavor melding.
- Leftover pizza is best reheated in an oven or toaster oven to keep the crust crisp.
