Description

Delicious no-bake Cornflake Peanut Butter Cookies that combine crunchy cornflakes with a rich, creamy peanut butter mixture, sweetened with sugar and corn syrup. These easy-to-make cookies require no baking and set quickly, making them a perfect treat for any occasion.

Ingredients

Scale

Wet Ingredients

  • ½ cup (100g) granulated sugar
  • ½ cup (160g) light corn syrup (or substitute with ½ cup mini marshmallows)
  • 2 tablespoons unsalted butter (optional)
  • ½ cup (120g) creamy peanut butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Dry Ingredients

  • 3 cups (85g) cornflake cereal

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent the cookies from sticking, making cleanup easier and ensuring the cookies set properly.
  2. Cook Wet Mixture: In a medium saucepan over low-medium heat, combine the sugar, corn syrup, butter, and peanut butter. Stir continuously with a spatula until the mixture starts to boil. Once boiling, immediately remove from the heat and stir in the vanilla extract and salt to enhance flavor.
  3. Fold in Cornflakes: Gently fold the cornflake cereal into the warm mixture, being careful not to break the cornflakes. Mix until all cornflakes are evenly coated with the peanut butter mixture.
  4. Portion Cookies: Spray a small cookie scoop with non-stick spray and use it to scoop out portions of the mixture onto the prepared baking sheet. If desired, gently flatten each cookie to your preferred thickness.
  5. Set Cookies: Allow the cookies to set at room temperature for approximately 30 minutes or until they are firm and ready to serve.

Notes

  • Using light corn syrup provides a smooth texture, but mini marshmallows can be used as a substitute for a different sweetness profile.
  • The butter is optional; omitting it will slightly change the texture but keep the cookies delicious.
  • Be gentle when folding the cornflakes to retain their crunch.
  • Store cookies in an airtight container at room temperature to keep them fresh for up to 3 days.
  • For a gluten-free version, ensure the cornflakes are certified gluten-free.
