Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent the cookies from sticking, making cleanup easier and ensuring the cookies set properly.
- Cook Wet Mixture: In a medium saucepan over low-medium heat, combine the sugar, corn syrup, butter, and peanut butter. Stir continuously with a spatula until the mixture starts to boil. Once boiling, immediately remove from the heat and stir in the vanilla extract and salt to enhance flavor.
- Fold in Cornflakes: Gently fold the cornflake cereal into the warm mixture, being careful not to break the cornflakes. Mix until all cornflakes are evenly coated with the peanut butter mixture.
- Portion Cookies: Spray a small cookie scoop with non-stick spray and use it to scoop out portions of the mixture onto the prepared baking sheet. If desired, gently flatten each cookie to your preferred thickness.
