Description

Cowboy Mushrooms are a savory, spiced mushroom side dish featuring large button mushrooms sautéed with onions, garlic, and a blend of smoked paprika, chili powder, and fresh thyme. Finished with a rich broth and Worcestershire sauce glaze, these mushrooms are perfect alongside steak, grilled meats, or mashed potatoes.

Ingredients

Scale

Vegetables

  • 1 lb large button mushrooms, cleaned and sliced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Fresh parsley, chopped (for garnish)

Fats & Oils

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil

Seasonings & Spices

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)

Liquids

  • 1/4 cup beef broth (or vegetable broth for a vegetarian option)
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Prepare the mushrooms: Clean the mushrooms by wiping them with a damp cloth or paper towel. Slice them evenly to ensure uniform cooking.
  2. Sauté the aromatics: In a large skillet, heat the butter and olive oil over medium-high heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Cook the mushrooms: Add the sliced mushrooms to the skillet and stir to combine with the onions and garlic. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.
  4. Season and simmer: Stir in the smoked paprika, onion powder, chili powder, salt, and black pepper. Add the fresh thyme and continue to cook for another 1-2 minutes, allowing the flavors to meld together.
  5. Deglaze with broth and Worcestershire sauce: Pour in the beef broth and Worcestershire sauce, stirring and scraping up any browned bits from the bottom of the pan. Let the mixture simmer for 5-6 minutes until the broth reduces slightly and the mushrooms are coated in a flavorful sauce.
  6. Garnish and serve: Remove the skillet from heat and garnish the cowboy mushrooms with freshly chopped parsley.
  7. Enjoy: Serve these savory mushrooms as a side dish or as a topping for steak, grilled meats, or mashed potatoes.

Notes

  • For a vegetarian version, substitute beef broth with vegetable broth and ensure Worcestershire sauce used is vegetarian-friendly.
  • Adjust salt and spice levels according to taste preferences.
  • Use fresh thyme for best flavor, but dried thyme works as a convenient alternative.
  • Ensure mushrooms are sliced evenly for consistent cooking.
  • This dish pairs excellently with hearty main courses such as steaks or roasted meats.
