  • 1 cup sharp cheddar cheese, cubed
  • 1/2 cup red onion, finely diced
  • 1/2 cup bell pepper, diced

Dressing Ingredients

  • 1/4 cup sour cream
  • 2 tablespoons barbecue sauce
  • 1 tablespoon lime juice

Instructions

  1. Cook Pasta: Prepare the rotini pasta according to the package directions until al dente. Drain and rinse under cold water to cool completely and stop the cooking process.
  2. Combine Salad Ingredients: In a large mixing bowl, add the cooled pasta, chopped bacon, black beans, corn, cherry tomatoes, cubed cheddar cheese, diced red onion, diced bell pepper, and chopped cilantro. Gently toss to mix.
  3. Prepare Dressing: In a separate bowl, whisk together the mayonnaise, sour cream, barbecue sauce, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper until you get a smooth, well-blended dressing.
