Instructions
- Preheat and prepare chicken: Preheat the oven to 375°F. Using a sharp knife, carefully slice a pocket into the side of each chicken breast, ensuring not to cut all the way through.
- Season the chicken: Season both the outside and inside of each chicken breast with salt, black pepper, and garlic powder to enhance the flavor throughout.
- Make the stuffing mixture: In a small bowl, combine the chopped spinach and dried cranberries until evenly mixed.

- Bake to finish cooking: Transfer the skillet with the seared chicken breasts to the preheated oven. Bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve: Remove the toothpicks or twine before serving. Optionally, brush with balsamic glaze for added flavor and serve with wild rice or a fresh side salad.
