Description

Creamy Marry Me Pasta is a rich and flavorful skillet pasta dish featuring tender chicken breasts simmered in a luscious Parmesan cream sauce with garlic and juicy cherry tomatoes. Perfectly cooked fettuccine pasta is tossed in the creamy sauce, creating a comforting and elegant meal that serves four.

Ingredients

Scale

Chicken and Seasonings

  • 2 boneless, skinless chicken breasts, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Sauce and Pasta

  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 8 oz fettuccine or your favorite pasta

Garnish

  • Fresh parsley for garnish

Instructions

  1. Cook Pasta: Boil salted water in a large pot and cook the pasta according to package directions until al dente. Drain the pasta well and set aside.
  2. Season and Cook Chicken: Season diced chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare Cream Sauce: In the same skillet, sauté minced garlic until fragrant, about 1 minute. Pour in the chicken broth and heavy cream, stirring occasionally, and bring the mixture to a simmer. Add grated Parmesan cheese and stir until the sauce thickens slightly.
  4. Add Tomatoes and Chicken: Stir in the halved cherry tomatoes and cooked chicken pieces into the sauce. Allow the mixture to simmer for another 2-3 minutes to meld flavors and warm through.
  5. Toss Pasta in Sauce: Add the cooked pasta directly into the skillet with the creamy sauce. Toss everything together to fully coat the pasta in the sauce evenly.
  6. Garnish and Serve: Sprinkle freshly chopped parsley over the pasta for a fresh aroma and visual appeal. Serve warm and enjoy your creamy, comforting dish!

Notes

  • For a lighter version, substitute heavy cream with half-and-half or milk, but the sauce will be less rich.
  • Use gluten-free pasta to make this recipe gluten-free.
  • Add red pepper flakes for a spicy kick if desired.
  • Freshly grated Parmesan cheese works best for melting and flavor.
  • Do not overcook the pasta to avoid mushy texture as it will cook slightly more in the sauce.
