Description

A rich and comforting Creamy Chicken Gnocchi Soup bursting with tender chicken, pillowy gnocchi, fresh spinach, and a flavorful garlic-infused broth finished with creamy heavy cream and Italian seasoning. Perfect for a cozy meal any day.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned on all sides. Remove chicken and set aside to keep warm.
  2. Sauté the Onion and Garlic: In the same pot, add chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is softened and the garlic is fragrant, building the soup’s flavor base.
  3. Add the Broth and Gnocchi: Pour in the chicken broth and bring the mixture to a boil. Stir in the gnocchi and cook according to package instructions, about 3 minutes, until they float to the surface indicating they are done.
  4. Return the Chicken and Add Cream: Add the cooked chicken back into the pot. Stir in heavy cream, chopped spinach, Italian seasoning, and season with salt and pepper. Let the soup simmer for another 5 minutes, allowing it to thicken and the flavors to meld together.
  5. Serve: Taste the soup and adjust the seasonings as needed. Serve hot for a delicious, creamy, and hearty soup experience.

Notes

  • To reduce calories, substitute heavy cream with half-and-half or milk, but the soup will be less creamy.
  • Feel free to add other vegetables like mushrooms or carrots for more texture and nutrition.
  • Ensure not to overcook the gnocchi to keep them tender and soft.
  • Leftover soup can be refrigerated for up to 3 days and reheated gently on the stovetop.
