Instructions
- Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned on all sides. Remove chicken and set aside to keep warm.

- Add the Broth and Gnocchi: Pour in the chicken broth and bring the mixture to a boil. Stir in the gnocchi and cook according to package instructions, about 3 minutes, until they float to the surface indicating they are done.
- Return the Chicken and Add Cream: Add the cooked chicken back into the pot. Stir in heavy cream, chopped spinach, Italian seasoning, and season with salt and pepper. Let the soup simmer for another 5 minutes, allowing it to thicken and the flavors to meld together.
