Instructions
- Combine Ingredients: In a small saucepan, mix the rolled oats, milk, a pinch of salt, and any optional spices like cinnamon, nutmeg, or cardamom. Heat over medium heat until it gently simmers.
- Whisk the Egg: While the oats start to cook, crack the egg (or separate yolks) into a bowl and whisk thoroughly until smooth and fully beaten for even incorporation.
- Temper the Egg: When the oats have cooked for about 5 minutes and are nearing completion, carefully take 1 to 2 tablespoons of the hot oat mixture and slowly whisk it into the beaten egg to temper it and prevent scrambling.
- Incorporate Egg Mixture: Reduce the heat to low, then slowly pour the tempered egg back into the saucepan, stirring constantly to combine evenly with the oats.
- Thicken the Custard: Continue stirring the oatmeal for another 1 to 2 minutes as it thickens into a custard-like texture. Remove from heat, then stir in the vanilla extract and maple syrup.
