Description

This Creamy Garlic Butter Tuscan Salmon is a rich and flavorful dish featuring tender salmon fillets cooked in a luscious garlic butter sauce with sun-dried tomatoes, spinach, and Parmesan cheese, perfect for an elegant yet easy-to-make dinner.

Ingredients

Scale

Salmon

  • 4 salmon fillets, skinless
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried Italian seasoning
  • 3 cups baby spinach
  • 1/2 cup grated Parmesan cheese

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Season the Salmon: Season the salmon fillets evenly with salt and pepper on both sides to enhance their natural flavors.
  2. Sear the Salmon: Heat olive oil in a large skillet over medium heat. Place the salmon fillets in the skillet and cook them for about 4-5 minutes on each side or until they reach your preferred doneness. Once cooked, remove the salmon from the skillet and set it aside.
  3. Sauté Garlic: In the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until the garlic becomes fragrant but not browned.
  4. Simmer the Sauce: Stir in the heavy cream, chicken broth, chopped sun-dried tomatoes, and dried Italian seasoning. Allow the sauce to gently simmer for 3-4 minutes to blend the flavors and thicken slightly.
  5. Add Spinach and Cheese: Incorporate the baby spinach and grated Parmesan cheese into the sauce, stirring continuously until the spinach wilts and the cheese is fully melted creating a creamy texture.
  6. Return Salmon to Skillet: Place the seared salmon back into the skillet, spooning the creamy sauce over each fillet. Let the salmon simmer in the sauce for another 2-3 minutes to absorb the flavors.
  7. Garnish and Serve: Sprinkle fresh parsley over the dish as garnish and serve hot for a delightful meal.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
  • Sun-dried tomatoes add a tangy depth; if unavailable, use cherry tomatoes as a fresh alternative.
  • Ensure not to overcook the salmon to keep it tender and juicy.
  • This dish pairs well with rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
