Description

This creamy red lentil soup is a comforting and delicious dish made with tender red lentils, aromatic vegetables, and rich coconut milk. Perfect for a cozy meal, it combines the warmth of cumin and the smoothness of blended coconut milk to create a hearty, nutritious bowl that is both satisfying and easy to prepare.

Ingredients

Scale

Soup Base

  • 1 cup red lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste

For Creaminess

  • 1 can coconut milk (400ml)
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil: In a pot over medium heat, heat 2 tablespoons of olive oil until shimmering.
  2. Sauté the vegetables: Add the chopped onion, minced garlic, diced carrot, and diced celery to the pot. Cook, stirring occasionally, until the vegetables become soft and translucent, about 5-7 minutes.
  3. Add cumin: Sprinkle in 1 teaspoon of cumin and stir for about 1 minute to release its aroma and flavor.
  4. Cook lentils in broth: Add 1 cup of red lentils and 4 cups of vegetable broth to the pot. Bring the mixture to a rolling boil over high heat.
  5. Simmer until lentils are tender: Reduce the heat to low and let the soup simmer gently for about 20 minutes, or until the lentils are fully cooked and tender.
  6. Add coconut milk and blend: Stir in the entire can of coconut milk (400ml), then use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
  7. Season to taste: Add salt and pepper according to your preference and stir well to combine.
  8. Serve hot: Ladle the creamy red lentil soup into bowls and enjoy warm for comforting deliciousness.
