- 1 cup red lentils
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 teaspoon cumin

For Creaminess
- 1 can coconut milk (400ml)
- 2 tablespoons olive oil
Instructions
- Heat the olive oil: In a pot over medium heat, heat 2 tablespoons of olive oil until shimmering.
- Sauté the vegetables: Add the chopped onion, minced garlic, diced carrot, and diced celery to the pot. Cook, stirring occasionally, until the vegetables become soft and translucent, about 5-7 minutes.
- Add cumin: Sprinkle in 1 teaspoon of cumin and stir for about 1 minute to release its aroma and flavor.
- Cook lentils in broth: Add 1 cup of red lentils and 4 cups of vegetable broth to the pot. Bring the mixture to a rolling boil over high heat.
- Simmer until lentils are tender: Reduce the heat to low and let the soup simmer gently for about 20 minutes, or until the lentils are fully cooked and tender.
- Add coconut milk and blend: Stir in the entire can of coconut milk (400ml), then use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
- Season to taste: Add salt and pepper according to your preference and stir well to combine.
- Serve hot: Ladle the creamy red lentil soup into bowls and enjoy warm for comforting deliciousness.
