Instructions
- Season and Sear Chicken: Season the chicken thighs or breasts with paprika, salt, pepper, and thyme. Heat olive oil or butter in a large skillet over medium heat and sear the chicken for about 3–4 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add the diced onion and minced garlic. Cook for 2–3 minutes until they become soft and fragrant, stirring occasionally to prevent burning.
- Add Rice and Liquids: Stir the uncooked long-grain white rice into the skillet with the onions and garlic. Pour in the chicken broth and heavy cream or half-and-half. Bring the mixture to a gentle simmer.
- Cook Chicken and Rice: Nestle the seared chicken pieces back into the skillet with the rice mixture. Cover with a lid and simmer on low heat for 20–25 minutes, or until the rice is tender and the chicken is fully cooked through.
- Add Cheese: Sprinkle the shredded cheese evenly over the top of the chicken and rice. Cover the skillet again and allow the cheese to melt for a few minutes.
