Description

Enjoy a warm and flavorful meal with this Crockpot Balsamic Chicken with Mushrooms recipe. Tender chicken breasts or thighs are slow-cooked with savory mushrooms, onions, and a rich balsamic glaze, creating a comforting dinner perfect for busy days. The honey and herbs add delightful sweetness and aroma, while the slow cooker makes preparation effortless.

Ingredients

Scale

Chicken and Vegetables

  • 4 pieces Boneless, skinless chicken breasts or thighs
  • 8 ounces Cremini or baby bella mushrooms
  • 1 medium Onion

Sauce and Seasoning

  • 3 cloves Garlic, minced
  • 1/2 cup Balsamic vinegar
  • 1 cup Chicken broth
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Olive oil

Thickening and Garnish

  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley, chopped

Instructions

  1. Preparation: Gather and prepare all ingredients by slicing the onions and mushrooms, and mincing the garlic.
  2. Layer the chicken and vegetables: Place the boneless, skinless chicken breasts or thighs at the bottom of the crockpot. Layer the sliced onions and mushrooms evenly on top of the chicken to add flavor and texture.
  3. Make the sauce: In a bowl, whisk together the minced garlic, balsamic vinegar, chicken broth, soy sauce, honey, dried oregano, dried thyme, salt, and black pepper to create a rich, flavorful sauce.
  4. Add sauce and olive oil: Pour the prepared sauce mixture evenly over the chicken and vegetable layers in the crockpot. Drizzle with olive oil to enhance the flavor.
  5. Cook: Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and can be easily shredded.
  6. Thicken the sauce (optional): If a thicker sauce is desired, mix the cornstarch and water to create a slurry and stir it into the crockpot during the last 30 minutes of cooking.
  7. Garnish and serve: Once cooking is complete, sprinkle freshly chopped parsley over the dish. Serve hot over mashed potatoes, rice, or pasta for a comforting meal.

Notes

  • Chicken thighs tend to be juicier and more flavorful, but chicken breasts work well if preferred.
  • Button mushrooms can be used if cremini or baby bella mushrooms are not available.
  • For a gluten-free version, substitute tamari for soy sauce.
  • Maple syrup or agave syrup can replace honey for a vegan-friendly option.
  • Adjust salt and pepper levels to your taste preference.
  • The dish pairs wonderfully with mashed potatoes, steamed rice, or pasta to soak up the balsamic sauce.
  • Fresh herbs like parsley add a pop of color and fresh flavor when served.
