Instructions

  1. Prepare the Croissants: Slice croissants in half horizontally with a serrated knife. If very fresh and soft, warm them in a 350°F oven for 2-3 minutes to firm up, preventing soggy bottoms and helping the sandwich hold together.
  2. Cook the Bacon: In a large skillet over medium heat, cook bacon strips for 6-8 minutes, flipping once until crispy. Transfer to paper towels. Optionally save a tablespoon of bacon fat to use for extra flavor in eggs.
  3. Scramble the Eggs: Crack eggs into a bowl, add cream, salt, and pepper, then whisk well. Melt 2 tablespoons butter in a non-stick pan over low-medium heat. Pour in eggs and let sit 30 seconds before gently stirring with a rubber spatula, pushing eggs from edges to center until creamy and just set. Remove from heat while slightly underdone to finish cooking with residual heat.
