Instructions

  1. Beat Cream Cheese and Butter: In the bowl of a stand mixer fitted with a paddle attachment, or a large bowl with a handheld mixer, beat together the softened cream cheese and butter on medium speed until creamy, about 3 minutes.
  2. Add Vanilla and Half Sugar: Add the vanilla extract and salt if using, then sift in half of the powdered sugar. Beat on low speed for 30 seconds just until combined.
  3. Add Remaining Sugar and Cocoa Powder: Sift in the remaining powdered sugar and cocoa powder. Beat on low speed for 30 seconds just until combined, then increase to medium speed and beat for 2 minutes until light and fluffy.
  4. Adjust Consistency: If the frosting is too thick or dry, add whole milk 1 teaspoon at a time, beating after each addition until combined and the desired consistency is reached. Use immediately by spreading on cakes or piping onto cupcakes.
