Ingredients
Scale
Roasted Strawberries
- 2 cups fresh strawberries, quartered
- 2 tablespoons allulose sweetener (or any granulated sweetener)
- 1 teaspoon vanilla extract
Mousse
- 8 ounces mascarpone cheese, softened
- 4 ounces cream cheese, softened
- 3 tablespoons powdered sweetener
- 1 teaspoon vanilla extract
- 1 cup whipping cream, beaten until stiff peaks
Instructions
- Preheat Oven: Preheat your oven to 375ºF (190ºC) and lightly grease a medium-sized baking dish to prepare for roasting the strawberries.
- Prepare Strawberries: Place the quartered strawberries in the greased baking dish. Sprinkle with allulose sweetener and vanilla extract, then gently toss to coat the berries evenly.
- Roast Strawberries: Roast the strawberries in the preheated oven for 20 to 25 minutes until they are soft and their juices have released, intensifying their natural sweetness.
- Mix Cheese Base: In a large mixing bowl, combine the softened mascarpone cheese, cream cheese, powdered sweetener, and vanilla extract. Beat until the mixture is smooth and well combined.
- Whip Cream: In a separate bowl, whip the heavy cream until it forms stiff peaks. This will give the mousse its light and fluffy texture.
- Fold Cream Into Cheese: Gently fold the whipped cream into the mascarpone mixture, being careful to maintain the airy texture.
- Assemble Dessert: Spoon or pipe the prepared mousse into six small dessert cups. Top each serving with the roasted strawberries along with their luscious juices for a beautiful and tasty finish.
