- Cook the pasta: Bring a large pot of salted water to a rolling boil. Add 1 lb of pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining the pasta to use later for sauce consistency.
- Sauté shallots: While pasta cooks, heat a large deep pan over medium heat. Add 1 tablespoon olive oil, minced shallot, ¼ teaspoon kosher salt, and ¼ teaspoon freshly cracked black pepper. Cook for about 5 minutes until the shallots become tender and fragrant.
- Add white wine and cream: Pour ½ cup of white wine into the pan with the shallots and stir to combine. Lower the heat and mix in ¼ cup heavy cream. Stir continuously until the sauce is smooth and slightly thickened.
- Combine pasta and sauce: Add the drained pasta directly into the pan with the sauce. Toss everything together until the pasta is well coated with the creamy sauce. If the sauce feels too thick, gradually add reserved pasta water one tablespoon at a time until the desired consistency is achieved.
