Ingredients
Scale
For the Toppings
- 2 tablespoons olive oil
- 1/2 cup onion, diced (about 1 small onion)
- 1 cup green pepper, diced
- 1 cup ham, diced
For the Eggs
- 8 large eggs
- 2 tablespoons milk
- 1 teaspoon hot sauce
For the Base and Final Assembly
- 4 tortillas or whole wheat pitas
- Olive oil (for brushing tortillas)
- 1 cup shredded cheese (Monterey Jack, Colby, or Mozzarella)
- Chives, optional, for garnish
Instructions
- Prepare the Vegetables and Ham: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and green pepper, sautéing until they are tender and fragrant, about 3-4 minutes. Add the diced ham and cook for an additional 2 minutes to warm through.
- Scramble the Eggs: In a bowl, whisk together the eggs, milk, and hot sauce until well combined. Pour the egg mixture over the sautéed vegetables and ham in the skillet. Cook gently, stirring frequently, until the eggs are softly scrambled and cooked through, about 4-5 minutes. Remove from heat.
- Prepare the Tortillas: Preheat the oven to 375°F (190°C). Lightly brush each tortilla with olive oil on both sides to help them crisp up. Place the tortillas on a baking sheet.
- Assemble the Breakfast Pizzas: Evenly distribute the scrambled egg mixture over each tortilla. Sprinkle the shredded cheese over the top of the eggs.
- Bake the Pizzas: Place the baking sheet in the preheated oven and bake for 6-8 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are golden and crispy.
- Garnish and Serve: Remove the breakfast pizzas from the oven and sprinkle with chopped chives if desired. Slice and serve immediately while warm.
Notes
- You can substitute the ham with cooked bacon, sausage, or make it vegetarian by omitting the meat.
- Try different cheeses such as cheddar or a spicy pepper jack for varied flavor profiles.
- Use whole wheat or gluten-free tortillas to accommodate dietary preferences.
- For extra veggies, add mushrooms or tomatoes with the onions and peppers.
- Leftovers can be refrigerated and reheated in a toaster oven or skillet for best texture.
