Instructions

  1. Marinate the Chicken: In a large ziplock bag, combine the chicken tenderloins, Italian dressing, undrained diced tomatoes with green chilies, taco seasoning, and lime juice. Toss everything together to evenly coat the chicken and refrigerate overnight to allow the flavors to meld.
  2. Prepare Chicken for Cooking: Remove the marinated chicken from the refrigerator, take the chicken pieces out of the marinade, and pat them dry with paper towels to ensure a good sear during cooking.
  3. Sauté Vegetables: Heat 1 tablespoon of olive oil in a large cast iron or non-stick skillet over medium-high heat. Add the sliced onions and bell peppers and cook, stirring occasionally, until the vegetables begin to soften, approximately 5 to 7 minutes.
