Ingredients
Scale
Protein
- 1 lb ground turkey (93% lean)
Vegetables
- 1 medium head of cabbage, thinly shredded
- 1 cup shredded carrots
- 1 sweet onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
Seasonings & Oils
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 2 tablespoons sesame oil
- 2 tablespoons cooking oil (e.g., avocado oil)
- Salt and pepper, to taste
Optional Garnishes
- Green onions
- Sesame seeds
Instructions
- Prepare Ingredients: Thinly shred the cabbage, shred the carrots, dice the sweet onion, and mince the garlic and fresh ginger to have all the produce ready for the stir-fry.
- Cook Ground Turkey: Heat 2 tablespoons of cooking oil in a large skillet or wok over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and cooked through, about 5-7 minutes. Season lightly with salt and pepper.
- Sauté Aromatics: Push the turkey to one side of the pan and add the diced onion, minced garlic, and ginger to the cleared space. Sauté until fragrant and the onions are translucent, approximately 2-3 minutes.
- Add Vegetables: Mix the cabbage and shredded carrots into the pan with the turkey and aromatics. Stir-fry the mixture, stirring frequently, until the cabbage is tender but still slightly crisp, about 5-7 minutes.
- Season the Dish: Drizzle the soy sauce, rice vinegar, and sesame oil over the stir-fry. Stir everything together thoroughly to evenly coat all ingredients and heat through for another 2 minutes to allow flavors to meld.
- Adjust Seasoning and Serve: Taste and add additional salt or pepper if needed. Remove from heat and transfer the egg roll mixture to serving bowls. Garnish with sliced green onions and a sprinkle of sesame seeds if desired.
Notes
- Use tamari instead of soy sauce for a gluten-free version.
- Ground turkey can be substituted with ground chicken or pork based on preference.
- To make this dish vegetarian, substitute meat with crumbled tofu or tempeh and use vegetable oil.
- For a spicier version, add red pepper flakes or a splash of sriracha during seasoning.
- Leftovers keep well for up to 3 days when refrigerated in an airtight container.
