Ribs and Dry Rub
- 3 racks baby ribs
- 4 Tbsp brown sugar
- 2 Tbsp paprika
- 1 Tbsp kosher salt
- 2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion salt
- 1 tsp celery salt
- 1 tsp cayenne pepper
- 1 tsp ground cumin
BBQ Sauce
- 1 cup ketchup
- 1 Tbsp Worcestershire sauce
- 2 to 3 dashes hot sauce
- 1 cup water
- ¼ cup vinegar
- 1 Tbsp sugar
- 1 tsp salt
- 1 tsp celery seed
Instructions
- Prep the ribs: Remove the membrane from the back of the ribs. If desired, cut each rack in half to make handling easier after cooking.
- Make the dry rub: In a small bowl, combine brown sugar, paprika, kosher salt, black pepper, garlic powder, onion salt, celery salt, cayenne pepper, and ground cumin.
- Apply the rub and marinate: Place one rack of ribs on two sheets of heavy-duty foil. Generously apply the dry rub on both sides of the ribs, patting it in gently. Wrap the ribs tightly in foil and refrigerate for 30 minutes to overnight.
- Cook the ribs in the oven: Preheat oven to 300°F (150°C). Place the foil-wrapped ribs on a rimmed baking sheet to catch any juices. Bake for 2½ to 3 hours, or until the ribs are tender and the bones twist with little resistance.
- Prepare the BBQ sauce: In a medium saucepan, combine ketchup, Worcestershire sauce, hot sauce, water, vinegar, sugar, salt, and celery seed. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Finish on the grill: Preheat the grill. Carefully unwrap the cooked ribs and transfer them to the grill. Brush generously with BBQ sauce and grill for 5-10 minutes to caramelize the sauce. Alternatively, brush with sauce and broil in the oven.
