Description

A comforting and flavorful French Onion Chicken Rice-a-Roni Casserole that combines savory chicken, creamy soups, and crispy French fried onions baked to perfection. This easy-to-make casserole is perfect for a family dinner or potluck and serves six people.

Ingredients

Scale

Main Ingredients

  • 1 box chicken flavor Rice-A-Roni
  • 1 (10.5-oz) can unsalted cream of chicken soup
  • ½ cup refrigerated sour cream based French onion dip
  • ½ tsp garlic powder
  • 4 cups cooked chopped chicken
  • 1½ cups shredded cheddar cheese
  • 1 (6-oz) can French fried onions, divided

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350º F (175º C). Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cook Rice-A-Roni and mix: Prepare the chicken flavor Rice-A-Roni according to the package directions. Once cooked, combine it in a large bowl with the cream of chicken soup, sour cream based French onion dip, garlic powder, cooked chopped chicken, shredded cheddar cheese, and half of the French fried onions. Stir all ingredients thoroughly until well blended.
  3. Assemble casserole: Spread the rice and chicken mixture evenly into the prepared baking dish. Sprinkle the remaining French fried onions evenly over the top of the casserole to add a crunchy topping.
  4. Bake the casserole: Place the uncovered baking dish in the preheated oven and bake for 30 minutes. Bake until the casserole is heated through, the cheese is melted, and the fried onions on top are golden brown and crispy.

Notes

  • Use cooked chicken such as rotisserie or leftover roasted chicken for convenience.
  • If you prefer a thicker casserole, reduce the amount of French onion dip slightly.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Substitute cheddar cheese with mozzarella or Monterey Jack for a different flavor profile.
  • For a gluten-free version, use a gluten-free rice pilaf or cook plain rice and add your own flavorings.
