Scale
Main Ingredients
- 1 1/2 cups plain Greek yogurt
- 1/2 cup natural peanut butter (creamy)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/3 cup mini chocolate chips
Optional Toppings
- 1/4 cup crushed peanuts or granola
Instructions
- Mix Ingredients: In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir thoroughly until the mixture is smooth and well blended.
- Add Chocolate Chips: Gently fold in the mini chocolate chips to distribute them evenly throughout the mixture without melting them.
- Prepare Pan: Line an 8×8-inch baking dish with parchment paper to prevent sticking and make removal easy.
- Pour and Spread: Pour the yogurt mixture into the prepared baking dish and use a spatula to spread it into an even layer.
- Add Toppings: Sprinkle the crushed peanuts or granola evenly over the top if using, adding texture and extra crunch.
- Freeze: Place the pan in the freezer and allow the mixture to freeze for at least 3–4 hours or until firm and set.
- Cut and Serve: Once frozen solid, remove the bar slab from the pan using the parchment paper and cut it into 9 bars. Store the bars in an airtight container in the freezer until ready to serve.
Notes
- Use full-fat Greek yogurt for the creamiest and richest texture.
- For an extra flavor twist, swirl in a bit of jam or melted chocolate before freezing.
- Let the bars sit at room temperature for a few minutes before eating to soften slightly for easier biting.
