Description

These colorful Fruit Tacos are a delightful twist on traditional tacos, featuring crispy cinnamon sugar tortilla shells filled with a fresh, vibrant medley of strawberries, kiwi, blueberries, mango, and pineapple. Topped optionally with whipped cream, Greek yogurt, shredded coconut, or mint, they make a perfect healthy dessert or kid-friendly snack that’s quick to prepare and bursting with refreshing flavors.

Ingredients

Scale

Taco Shells

  • 4 small flour tortillas
  • 2 tablespoons butter, melted
  • 1 tablespoon cinnamon sugar

Fruit Filling

  • 1 cup strawberries, diced
  • 1 kiwi, peeled and chopped
  • ½ cup blueberries
  • ½ cup mango, diced
  • ½ cup pineapple, diced
  • 1 teaspoon honey or agave syrup
  • ½ teaspoon lime juice

Optional Toppings

  • Whipped cream
  • Greek yogurt
  • Shredded coconut
  • Chopped fresh mint

Instructions

  1. Preheat and prepare tortillas: Preheat your oven to 375°F (190°C). Brush both sides of the tortillas evenly with the melted butter and sprinkle all over with cinnamon sugar to add sweetness and crispiness.
  2. Shape and bake the shells: Drape each tortilla over two bars of the oven rack to shape them into taco shells. Bake for 6 to 8 minutes, or until the tortillas become crisp and golden brown. Then remove them carefully and allow to cool completely to hold their shape.
  3. Prepare the fruit filling: In a medium bowl, combine the diced strawberries, peeled and chopped kiwi, blueberries, mango, and pineapple. Drizzle with honey or agave syrup and lime juice for a bright, sweet-tart flavor. Toss gently to mix without bruising the fruit.
  4. Assemble the tacos: Once the shells are fully cooled, spoon the mixed fruit evenly into each taco shell, filling them generously.
  5. Add optional toppings and serve: Top the fruit-filled tacos with your choice of whipped cream, Greek yogurt, shredded coconut, or chopped fresh mint to enhance texture and flavor. Serve immediately to enjoy the crisp shells and fresh fruit at their best.

Notes

  • You can substitute or add any combination of fresh seasonal fruits based on availability or preference.
  • To prepare the taco shells ahead of time, store them in an airtight container for up to 2 days to maintain crispness.
  • For a healthier option, use whole wheat tortillas and omit the butter for brushing.
  • These tacos are best enjoyed fresh to keep the shells crunchy and the fruit vibrant.
